I replaced all 4 of the O2 sensors on my truck a week ago and this afternoon while I was driving home the check engine light came on and through the p0430 engine code what would cause this issue with new o2's

You mean you really didn't have 4 defective 0/2 sensor? What a shock.

The code means you have a bad Catalytic Converter on bank 2, not bad 0/2s

So the cat itself needs to be replaced? Is it better to use a aftermarket or oe replacement

You can use an aftermarket but make sure it's an OBD2 Cat. Let the exhaust shop do it for you. They do a better job than you ever could and they may actually be cheaper.
