So, when I hit my gas from low speeds the car stutters around 7,000 RPMs and honestly I think it's just having trouble switching gears but it is an automatic, so I'm confused on what it is.

Hello,

I am sure that 7,000 RPMs was a typo? Should it not read 700 RPMs?

If the engine stutters at low RPMs with high load you most likely have an issue with the high-tension ignition system, either ignition coils or spark plugs. See image 1 below
The engine is fitted with eight ignition coils, 1 for each cylinder

It would be good to have the engine control module checked with a diagnostic tool.
To check if there is a misfire counter on any of the eight cylinders and possible fault codes set. An easy way to test is to apply hand brake and foot brake, engage D and mash the accelerator down. Keep it there with brakes applied for a few seconds (max 5 seconds) and feel if the engine is stuttering, also with the scan tool connected and set to record misfire counters. This cam guides you as to which cylinder is affected.

Hope this helps.
