Check the fuel pressure when the engine is running, driving and after it stalls. It should be the same or a little higher during those times.

Also, Is the "check engine light" on?

You might want to consider a collapsing pickup screen in the fuel tank or a plugged fuel filter. Those will cause stalling when the pump needs to move the highest volume of fuel, which during coasting. When sufficient volume can't be achieved, the pressure drops to the point it causes stalling. The clue is the engine will restart but probably is little hard, and it will act up the next time in less time and miles than the first time. It will also run okay when a lower fuel volume is needed which is at highway speed.
