Can I install a stroker engine kit?

Just wanted to know if it could be done with a stock EFI.

Sure, no problem. Summit racing has a nice kit to make it happen, here is the complete build with part numbers and what needs to be done to the engine block. All the link to the parts used are below the videos.

It will make it a "347" cubic inch engine. Let us know if you need anything else.
