Are you attempting this in Park or is it happening at highway speeds?

If your attempting this while the car is in Park, then it's just the rev limiter kicking in like it's supposed to. If it does it while driving, then you want to check your fuel pressure with a gauge and rg it up so it can be monitored during the failure.
