2001 Buick Lesabre radiator fans

My radiator fans will not come on unless my ac is running. I just recently replaced my ac compressor and water pump. When I unplug the fans from the coolant sensor they came on so I replaced the coolant sensor and they still won't come on I made sure they were plugged in. What could this be now my coolant meter jumps from the halfway marker to hot.

Could be a wirng problem, fan relay and the computer
