Dealer tells me the noise I am hearing is a bad bearing in the A/C Compressor. It will be expensive to repair. What risks do I take if I do nothing and keep driving the car?

If it has its own belt -remove it -I believe yours is a serpentine belt to avoid more problems just don't turn the AC on.
