1999 Buick Century 6 cyl Automatic 66,000 miles

I brought a 1999 Buick century from my friend's family. It was there grandmother's and it was a good buy with low mileage. When I first started driving it, I noticed that the temperature gadge was jumping. I called around and found out it was the thermostat. I got a new thermostat put on and the guy also gave me a flush and put some new anti-freeze in there. I drove it for about three and a half weeks and it started jumping again. Found out that I needed a new water pump and got one put in yesterday. I notice that when i stop now or park my car that the needles jumps again to the middle then to the second line. It's driving me crazy, what should i do or am i being paronoid.

Is the radiator fan coming on when it starts to climb? Does this only happen when you are in traffic or at highway speed too?
