Is it bad to push the brakes (while the car is off) to harden them?

Are you referring to depleting the stored vacuum for the power assist? No, that won't hurt anything, but what is the point? Enough vacuum is stored to allow two to three power-assisted stops after the engine stalls so you can stop the car in an emergency. That vacuum is going to bleed off eventually after the engine is turned off but if there's no leaks it should take quite a while.
