Dashboard brake light is on. checked the fluid level and it’s right in the middle of max and minimum. I also unplug the had brake sensor to see if the light turned off and it did not. what else would cause the brake to be on?

Check that the parking brake handle didn't move it's a common cause for the light to come on. The next most common would be a brake line or mechanical system failure that allowed the warning switch to move. Does the brake pedal still work as it did before the light? If it goes down a ways before you have brakes then it could be a failure or leak.
