On my van listed above do the rear brakes self-adjust by driving forward and reverse or applying the emergency brake?

They take up the slack gap every time you use the brakes! I believe you can consider that self adjusting.
That is the beauty of disk brakes, less mechanical parts, maintenance is minimal.

The trick is keeping them that way!
Riding the brakes/off and on them constantly instead of coasting down to a stop. The cooler they can be, the longer they will last.

Now the video says about a reset tool if the emergency brake is attached to the back brakes. Can a DIYer do that?

Yes, about everything is DIY.
The only thing "brake", that is not normally DIY on these modern computer cars would be bleeding the brake system. Some of these require a meter to open up the system so the brakes will bleed. Most little guys will not spend the money for the tool but will take it to a shop.
