How do you turn off the sensor light after the pads are replaced?

The lamp is extinguished by turning the key to the KL-15 position(key on engine off) for about 45 seconds, if the sensors were replaced and everything else is nominal, this should take care of the tattletale lamp for the brake pad monitoring.
