My 1995 BMW 525i sometimes idles high while in park (1000rpm) and when I accelerate from a stand still i take my foot off of the gas and it continues to accelerate for a few seconds then it throttles down. What could be causing that.

A dirty throttle plate or a dirty idle control valve can be at the cause of your issue.
