My 325i is running hot. I opened the hood and there was steam coming from the air filter housing. I have a suggestion that it's a leaky intake manifold gasket. Does this sound right? What else could it be?

Most likely the coolant system is compromised and there is a crack in the expansion tank, look at this site: http://www.realoem.com/bmw/partgrp.do?model=ET37&mospid=47720&hg=17&fg=05

How is the coolant getting in the air filter?

The appearance is that of what you think is coolant from the air filter. It just looks that way, pressure testing the cooling system will pinpoint the leak, I know you'll see what I mean.
