how diffucult is it to replace a rear wheel bearing on a 94 BMW 325is. Does it have to be cut off and pressed back on?

The task isn't difficult but it does require special tools. Most "shade tree" mechanics wont have the ability to perform this repair due to the expense of the special tooling. It's like this, do you spend several hundred dollars for the tools to perform this operation maybe once in the lifetime of your ownership of the car, or do you have this work performed by someone who does have the tools and has replaced rear wheel bearings on a BMW before?
