Two same cars, let us say 325, one have a bigger differential than the other. Which one will have the higher speed when they are both at the same gear and the same RPM?

It's not the size of the differential. It's the gear ratio. The one with the lower number gear ratio 3:23-1 vs 4:10-1 would actually be geared higher and would be traveling at high speed at a specific RPM but it would have less acceleration torque.
