I am looking at a 1998 audi a4 v6 that has a blown head gasket and there is water in the oil and possibly oil in he water. Is this something I should stay away from, or is it really not that big of a project?

Coolant in the oil will wash the main bearings of oil and can damage them in short order. So besides the head gasket, you most likely will have to replace the main bearings and possibly have the crank reground or replaced.
If the heads are warped, they may have to be replaced. This can get into some serious money and time.
It is possible the bearings are OK but you won't know until you inspect them.
