A/C not working properly?

Last week: hot air on one side, cold on the drivers' side.

Today: no cold air, weak air flow.

FYI: temperature control dials don’t stop. They just turn endlessly. This is a car I just bought so I'm not sure if this is normal.

This sounds normal for the temperature knob problem. I would check the cabin air filter and replace the blend door actuator on the driver's side here is the location of the cabin filter and actuator so you can get the job done. Also make sure the coolant is topped off. Check out the images (below). Let us know what happens and please upload pictures or videos of the problem.
