I believe we have two different issues. If the temperature gauge never moves from cold in those temps, either the sensor is bad, disconnected, or there is a wiring issue.
Lets start with the gauge issue. Here are directions for removal and replacement of the temperature sensor. Before just replacing it, check the connection to make sure it is clean, tight, properly connected, and not damaged. The attached pictures correlate with the directions.

Removal Procedure

1. Disconnect the engine wiring harness electrical connector (1) from the engine coolant temperature (ECT) sensor.

2. Remove the ECT sensor.
Installation Procedure

Notice: Refer to Fastener Notice.
1. Install the ECT sensor.
Tighten the sensor to 22 N.M (16 lb ft).

2. Connect the engine wiring harness electrical connector (1) to the ECT sensor.
