I installed a new high-pressure line, and I’m in the vacuuming stage but when I turn on the vacuum, the gauges continue to read 0 after a few minutes and it looked like it was almost instant online.

Test the pump and gauges by shutting off the valves, does it read a vacuum then? How long was the system open or empty? If only long enough to change the line, I would check that it isn't leaking. Normally a pump will run maybe a minute at most before starting to show a vacuum.
