2018 Cayman 718 high oil pressure. No warning lights?

Oil pressure maxed to 73psi while driving down to 30 ish when idle

O wow, yep that is not good, I would replace the oil pressure senso first and then clear the codes. Here is the location so you can swap it out. Clear the codes once completed.

I replaced the oil sensor with a Porsche oem part and nothing changed. (Old sensor was not bad, i assume)
I suspect the issue is slightly damaged wire that signals the instrument cluster which could potentially loose voltage under acceleration (engine movement/vibration) causing the bad reading only while driving and back to normal reading during idle.

I have a picture that support my theory, however since the image quality is not the best, i could be totally wrong.

If the wire is broken then that is the problem, you could have a bad connector as well, I would get a new oil pressure sender pigtail and replacing it, that should fix the problem.
