After driving for a while, The oil pressure drops from 40 psi to 20 psi (when stopped at a stop light or stop sign). Once I accelerate it goes back up to 40 psi and stays there until i stop again. Is this normal?

Yes this is normal, hot idle oil pressure will drop lower than cruise pressure, and at 20 PSI hot thats quite ok.
