I have rust in the center part of my rear rotors what can I do to prevent this from happening again.

Don't drive the car. I actually have a giant plastic baggy meant for storing classic cars. The manufacturer claims rotors won't rust once you vacuum out the air.
Rust buildup is normal from the humidity in the air. You can try painting the non-contact surfaces with high-temperature engine paint but that's only for cosmetics. It won't make them last any longer or stop better.
