I just bought a VW Eos 3 days ago. It is a hard top convertible.
I have condensation on the inside if all my windows. What causes this?

Make sure you are allowing fresh air to enter the vehicle (not recircullated air).

I've only had the car for three days! Had the windows open and the top down. Did not have AC on. Every time I close all the windows for a period of time and come back the windows are covered with condensation. I am worried if this is going to continue into the winter and they freeze!

That is odd. Is the carpet wet? Maybe before you purchased the car, they scrubbed the carpet.
