what model? and what motor? turbo or non-turbo? anyway you could have a bad thermostat or a bad coolant temperature sensor.it would be a good idea to replace both because this vehicle has a history of failure for these parts.

It an 07 jetta 2.5, wolfburg edition, non turbo. I've trying to just do the research. The sensor does sound familiar.
