Water overflow is bubbling and if you take the thermostat out it doesn't over heat but you put thermostat in and it goes to red hot. What could that be?

Do you see that bubbling right after starting the engine when it's still cold? If so, you know it's not overheating yet. That's a sign of a leaking head gasket. When combustion gases leak into the cooling system, that air can pool under the thermostat and prevent it from opening. They open in response to hot liquid, not hot air.
