2006 Ford Taurus Cooler acting up

After driving our 2006 Ford Taurus a few miles, I stop and put the car in park and when I turn the air conditioner off, my engine turns off and the omissions light turns on.

I have two thoughts. First, the idle speed is controlled by an idle air control solenoid (IAC). When the AC is on, the computer tells the IAC to increase idle speed to account for the added load on the engine. If it is bad, it may be allowing the engine to stall.

As far as the emissions light, you need to get a scanner to determine what is causing that to turn on. Most parts stores will scan it for free.
