heard a pop, followed by a sputtering noise and the truck jerking slightly. sputters as I give it gas, no overheating or any oil pressure changes, simply the slight smell of gas, and the check engine light is now on. Any ideas?

I know in the triton V8's they had a lot of issues with the engine blowing out spark plugs. I would look to see if that is the problem.

I checked under the hood in the am and I was even more confused. No leaks anywhere, sputtering still and no pressure changes at all. Just smell of gas but not severe.

I would have a pro check to make sure a plug didn't blow out or other issue. If your smelling fuel then its obvious to me your engine passing a lot of unburned fuel.
