heat past 230 degrees and blow out cold air when heat is on?

Why does the temp on my Pontiac grand am heat past 230 degrees and blow out cold air when heat is on, only to drop the temp back down to normal and blow out hot air after it goes past 230. This just started.

Already tried replacing thermostat, no change

It sounds like the engine is low on coolant, if okay check the operation of the air blend door/actuator and engine temp sender
