when i drive up hill the transmission starts to heat up the truck shifts fine and i just put a new transmission in. Could this be a temperature sensor or something bigger? just yesterday i had to go 25 mph up the hill and halfway up the tranny cooled down and i could drive 65 mph again it is just acting weird.

Check the tranny fluid level if okay -New transmission could be slipping have it checked-

Have the transmission fluid cooler checked as well.
