car starts then motor revs to 3500rpms then cuts off but if i keep gas pedel engaged rpms go up and down and then shut off

Check and clean the EGR and IAC.
A mass air flow sensor measures the amount of airflow across it. Some do it by measuring the amount of thermal change in the sensor caused by the air charge, others do it by measuring the amount of deflection of the vane in the air flow.

Are you getting any codes? Check engine light? Check for vacuum leaks. You need to check for both hard and soft codes.
