In a 2005 Ford Escape can a computer chip or a change in the ECM help it to get better gas mileage? If a different chip can be installed what are the best companies to buy from?

You can't do anything but make it worse. Chips are used to improve performance through modifying the factory program but performance always sacrifices economy. The engine is already engineered to fun at peak economy without creating performance issues.
