What's going on?

When I crank my Tahoe the engine is tapping loudly for about a minute, then it sounds perfectly fine. The oil level is fine.

Usually this is an indication of low oil level.
Since you said the level was fine you should check to see how long it has been since it was changed. Old oil will sometimes cause this problem.
