how do you change the catalytic converters on my car listed above it has the 3.6 engine?

You should start with the engine cold then you will need to raise the car up. Start by spraying wd40 on the bolts to help them to be loosen,

The check engine light is going on and I have been told that I need to change the catalytic converter. Will my car make a 700 mile drive to Los Angeles with a non working catalytic converter that needs to be changed?

It really matters the present condition of the converter. If you have experienced power loss, decreased fuel economy I would say no. If it runs okay you should be fine

How long should it take my mechanic to replace, are they replaced from the top or bottom of the engine, and can we just replace one or must we replace both (there are two)? I'm in California. Thanks for your input.

They are from the bottom. Aprox 2 hours.

Dealer says both catalytic converters need to be replaced. What would be the causes of both at the same time? Have codes of p0341, p2231, p2234 reading on the diagnostics report.

catalytic converter starts breaking up over time. When they do it starts to clog the exhaust from going out the tail pipe. a easy way to check converter is when its cold bang on it from under the car and see if you hear anything loose. If you do then the converter is breaking up. There is a code section that will explain what the codes are.
