2004 pontiac grand am se low coolant light

I have a 2004 pontiac grand am SE 3400 V6... My question is since it has been getting cold here in MN the low coolant light comes on when the car is cold and after a minute or so of the car being on the light shuts off.. the car is full of coolant...it is not leaking it and not burning it.. Any thoughts on what it would be?

The cold as in 0 degrees and below 0 as in -10 degrees
