GAGE SHOWS OVERHEATING?

ITS BEEN RAINNING VERY HARD COUPLE OF DAYS. RECENTLY NOTICED THAT MY '04 IMPALA TEMPERATURE GAGE BEEN JUMPING HIGH TEMP? JUS RIGHT @ THE START OF IGNITION and/or 5MIN WHILE DRIVING IT JUMPS HIGH. CHECK THE WATER ITS FULL & THE RESERVE ITS FULL. GOT THE OIL CHANGE YESTERDAY & THE GUY THERE SAID COULD B THE FAN ON THE INSIDE? OR ELECTRICAL PROBLEM. THERE IS NO WARNNING LIGHT OR ANYTHING @ ALL.

The thermostat may be sticky, and taking a while to open, causing the spike in temp then more normal readings, I would get a new thermostat and make sure it has a bleed hole in it.
