2004 BMW 325i Cooling system

I have replaced radiator, thermastat, holes, fan clutch, expansion tank, spart plugs, and head gaskets in the temperature gage still moving up in down want to run hot, what could be the problem?

If the temp gauge is moving around, that means there is air in the system. You have to make sure you get all the air out when you fill it in the first place. We use a vacuum fill tool. If air is getting in after, then you either have a leak or you are getting combustion gases in there somehow, possibly still an issue with the head or head gasket.
