I am selling my 2004 audi s4. The factory installed stock exhaust is rusted. Is this normal considering I live in Canada?

Are you saying the new exhaust is rusted or the OEM one? If the OEM, 7 years isn't too bad.

I purchased the car used so as far as I know, the exhaust is the original OEM one. The car itself only has about 75,000kms. Is this within the normal life expectancy for the exhaust?

Based on mileage, I would say yes. Actually, fewer miles over the years is actually harder than a lot of miles on the exhaust. Condensation accumulates in there. If the car isn't run too often (low mileage), the water never has much time to dry, therefore it doesn't last as long.
