My passat seems to lack the "take off" power when driving and I wanted to know how to adjust it to give me more power.

Upgrade to a cold air intake, buy a programmer like superchips, diablo, etc...You have to remember that its a turbo. You have that turbo lag unlike a supercharger. Check on VW forums and see what others are using to produce better performance.
