Got an estimate from a new mechanic and the price seems a bit high to me. Just want to be sure we're getting a fair price. For new intake manifold gasket, radiator and cap, and thermostat + labor -- $1500. Labor is estimated at $800 of this price. Does this seem legitimate? If so, we'll suck it up and get it done. Just don't want to overpay. Also, will other mechanics quote me over the phone if I tell them what needs done or do they have to see the car to do it?

Thanks so much for your help.

Did you get a written estimate? You can get written estimates from any shop. I would call around. Looks to be around 10 hours of labor for all. Looks to be legit. Best practice to do is get a written estimate before labor is performed. If they perform the work make sure they tell you of anything else needing replacement so you know up front for cost. Many shops say you will need this and that replaced but come back later saying you needed something else replaced when you get the final bill which is over $200 more.
