why acceleration going up and down?

my car is manual. the engine rpm going up and down(1000 to 2000) in between gear shifting.That is for gear shifting I press the clutch pedal the rpm acting like this and if I hold it(clutch)after sometime rpm coming down why?

check for vacuum leaks, and check the idle air control valve.
