I may need to repair of replace the transmission on a 2003 Odyssey. In the end which is more cost effective? I plan to keep the vehicle in any case.

Depending on what is wrong with the transmission, either could be. Get a quote locally to be more specific as prices ranges region to region and according to conditions.

Later this afternoon I found out that my transmission was low on fluid and it caused the transmission to fail. There was no trace of fluid loss on the exterior. Why would the fluid evaporate?

Fluids do not evaporate. There must be a leak somewhere or it was not filled up correctly the last time the fluids were drained.
