My throttle is sticking. Have cleaned the throttle cable, appears nice and free, and have tightened the throttle spring. What next?
Also I've noticed the ac clutch is engaging on its own periodically, is this normal?

try cleaning your throttle plate on both sides with choke cleaner but you may have fraying going on inside the cabel causing it to stick so replacing it may be the best option. especially due to mileage. if it's drive by wire then clenaing the palte will help.
