I idling on a slope with my nose pointing down when my temperature guage rose way up towards the red.

A few days later it happened again. Once I leveled out, it went down again. Later I topped off my coolant with a little more than a quarter gal of fluid. It hasn't happened since. What happened?

You were low on coolant most likely causing an air pocket. Make sure to keep it full.
