I have a 2002 grandprix and when I start my car up it will cut back off what is wrong with my car and I hear like a weird hissing noise

Check the fuel pressure if its within specs to rule out the fuel filter and fuel pump-start here

In addition to what Raz recommended, if your hearing a hissing noise check the engine over carefully for a disconnected or broken vacuum hose.
