why does the electrical connector on low beam lights keep frying

most likely a bad ground causing high resistance and high amperage to the connector.

Need a lot more information than that. Both connectors at both head lights? One connector feeding both lights? The connector at the head light switch? How often does this happen, once a year, right away? What do you mean by "frying"? Does it burst into flames, melt, smoke, arc, or just stop working?

You got that backward. High resistance in the connector will cause heat buildup but lower current, . . . like the lower water flow when you step on a garden hose.
