Why does my car rev up to 2000 rpm every time its started

During cold start, the engine computer is programmed to increase the rpm and would gradually lowers to the correct idling rpm. The amount of increase in rpm may vary according to engine coolant temperature. If the engine maintain a high rpm after a short running time and does not lower, there could be vacuum leaks or a fault with the idle control system.
