What should the cost be on replacing a fuel pump in a 2001 Chrysler Sebring convertable?

It really depends on the brand and whether you intend to change it yourself or have a shop do it for you. Autozone has an Airtex Master fuel pump for $214.99, but you would also have to add labor costs if you were going to take it to a shop.
