2001 Chrysler Pt Cruiser Coolant Light Comes On Gauge Way Cold Will Normal

My coolant light comes on and gauge go all the way cold, then will go to normal,then cold. Until it finally gets warmed up from running and it will stay at normal temp. I changed the thermostat, but it is still doing it

sounds like air in the system.

did it overheat before changing the thermostat??
