2001 Cadillac Deville temperature gauge runs above halfway mark

I have had the head gasket, water pump, 2 sensors, temperature gauge, radiator, battery, starter, coolant system flushed 4x; all replaced within the last 2 years. The temperature gauge still continues to go up a notch above half and then goes up another notch then comes down. I have spent a huge amount of money. My question is what else would cause the temperature gauge to run above half. When I have gone to the mechanic when it shows running hot and they put the gauge with the red dot on the engine, it is not showing hot. Please Please help

You may be trying to fix something that isn't broken. The cooling fans aren't designed to come on until approx 225 degrees and that may seen hot but that is intentional. Just monitor the cooling fan. If the fan comes on and then shuts off on it's own, then the engine has colled to the expected temp and it's working normal.
